Chef Josh Silvers

Three Squares Café

Chef Josh Silvers

Josh Silvers is the Chef Owner of Three Squares Café and Jackson’s Bar & Oven in Santa Rosa. Josh was the chef/owner of Syrah Bistro for over 14 years. Early in 2012, he decided to reinvent Syrah and open a new restaurant in the same space which he now calls Three Squares Cafe. His excitement with Jackson’s casual wine country “eats” prompted him to remodel Syrah and make it more casual. The Three Squares Café features wholesome comfort food and the wine list is made of many of the Sonoma County’s favorite local wines. The café like its predecessors has opened to wide spread enthusiasm and rave reviews.

Jackson's Bar and Oven which opened in November, 2009 was named after Josh's son and one of his favorite ways of cooking. This edgy restaurant has something for everyone, relax in a beautiful bar with a hand-crafted Cocktail or glass of wine, dine at the pizza bar and watch the chefs create and cook pizza in the wood-fired oven or enjoy the burgers, steaks and specialty salads.

The Three Squares Café and Jackson’s continued to follow in Josh’s hallmark of creating popular destination restaurants for locals and tourist alike. Both restaurants are located in the historic Railroad Square area of Santa Rosa. They both feature the same 'slow food' philosophy of farm to table and showcase the abundance of artisans Sonoma County is famous for.

Bite Club Eats

"On the first morning of breakfast service for Three Squares Cafe, the newly reborn Syrah in Railroad Square, chef-owner Josh Silvers wandered from table to table greeting, well, other chefs. Like much of the local dining community, the anticipation among other restaurateurs was palpable: What would become of the iconic space? It turns out to be exactly what many of us hoped it would be–a return to the comfortable, warm, homey cooking that’s Silvers’ hallmark."

Fair and Square - from Bohemian.com

"Chef Josh Silvers made me raise my eyebrows when he said his new restaurant would feature "healthy comfort food." The replacement of Petite Syrah in Santa Rosa's Railroad Square would be a breakfast, lunch and dinner cafe with an oxymoronic focus? Face it, "healthy comfort food" sounds like a bad Food Network show, or at least a terrible magazine.

But Silvers has pulled it off. "

Cox Review: Silvers Gets Homey - from 707.pressdemocrat.com

"Josh Silvers looked around his reinvented Three Squares Café that was once Syrah and then Petite Syrah, and declared with satisfaction that it is now “heymish,” a Yiddish word that means homey.

While Silvers’ new dishes are as delicious as ever, he has stepped away from the frippery of the past and now concentrates on delivering comfort food with great taste. It’s an American and, well, homey style of cooking, but done with a master chef’s sensibility. The effect is as though Silvers took a great big deep breath and relaxed."
